Preheat the oven to 400°F / 204°C. Line a tray with baking paper.
Combine brown rice, water, and salt in a pot on the stove. Bring to a boil, reduce to simmer, and cook, covered for 40-45 minutes. Remove from heat,and let sit, covered for 10 minutes. Then add rice vinegar.
Pat salmon dry with a paper towel. Drizzle with sesame oil, tamari (or soy sauce), and sesame seeds. Bake for 12-15 minutes, or until it is fully cooked and flakes easily.
Plate rice, salmon, vegetables, avocado and seaweed snacks. Enjoy!
