Ingredients
- 1 salmon filet , 125g
- 2 almond flour tortillas , I like Siete brand
- cooking spray
- ½ tsp dried oregano
- ½ tsp garlic powder
- ½ tsp chili powder
- 1 cup cherry tomatoes , quartered
- 2 tbsp cilantro , chopped
- 1 avocado , cubed
- ½ lime , juiced
- salt and pepper , to taste

Instructions
- Preheat the oven to 350F. Line a small baking tray with foil.
- Add the salmon and tortillas. Spray with cooking oil. Sprinkle the oregano, garlic powder, and chili powder over the salmon. Bake for 10-12 minutes, depending on the salmon’s thickness. The tortillas will turn golden and crispy.
- Meanwhile, combine the tomatoes, cilantro, avocado, and lime juice. Season with salt and pepper.
- Layer half the tomato mixture onto each of the tortillas, top with salmon. Enjoy!
