Instructions
  1. Preheat the oven to 400 degrees F and grease a baking sheet with coconut oil.
  2. Add the ground turkey, egg, shallot, and garlic to a large mixing bowl and mix well. 
  3. Add in the remaining ingredients and mix until combined. Form into 14 small meatballs and bake for 8 minutes on each side.
  4. While the meatballs are cooking, make the dressing by adding all the ingredients to a food processor or high-speed blender. Blend and set aside to serve with the meatballs.
  5. Once the meatballs are cooked, serve with spiralized zucchini, spaghetti squash, or rice noodles and drizzle with the rosemary and lemon dressing.

    My husband is super fussy and he really likes this dish, over spaghetti squash. The sauce makes a lot so i usually half it.

    My husband and I really liked the meatballs. We had to add some sugar and melted butter to the lemon dressing but it was really good over trader joes gnocchi!

  3. Made this in a mini muffin tin instead to make 24 meatballs… baked at 350 for 20-25 and served over egg noodles. 2 year old, 4 year old, and husband approved!

      We’ve only tried the recipe as written, John so don’t recommend subbing the eggs. However, you can maybe try a flax egg (google for how to make it), or an egg substitute? We can’t vouch for how those options will turn out, but those are options if you want to try. Hope that helps!

    1. Hi Lori! Almond flour is actually not a direct substitute for almond meal – the flour is a lot lighter and fluffier! If you don’t have almond meal, you could try substituting with bread crumbs, rolled oats, or other ground nuts. I hope this helps! 🙂
