- 1 zucchini - chopped into 1" cubes
- 1 sweet potato - peeled and chopped
- 1 head broccoli - chopped
- 1 pepper - cut into 1" pieces
- 1 can white beans (preferably cannellini) - drained and rinsed
- 1 tbsp olive oil
- salt + pepper

- 1/2 cup olive oil
- 1/3 cup fresh lime juice
- 3 cloves garlic - minced
- 1/4 tsp oregano
- 1-2 tbsp Vegenaise
- salt + pepper

Instructions
- Preheat oven to 425 degrees F. Spread sweet potato on a baking sheet and toss with olive oil. Cook sweet potato for 20 minutes. After 20 minutes, remove sweet potato, add remaining veggies and beans plus another drizzle of olive oil to coat, mix well, sprinkle with salt and pepper and return to oven for another 20-25 minutes. (you may also combine and roast everything at once to save time!)
- While veggies and beans cook, whisk together dressing ingredients. Pour dressing over veggie mixture and enjoy!
Why do I have to bake the sweet potatoes separate from the veggies? They all should need about the Same time to get ready and I would spare some time!
This was really good! I can’t wait to eat the leftovers tomorrow. (Also, I roasted everything at the same time)
