Preheat oven to 425 degrees F. Spread sweet potato on a baking sheet and toss with olive oil. Cook sweet potato for 20 minutes. After 20 minutes, remove sweet potato, add remaining veggies and beans plus another drizzle of olive oil to coat, mix well, sprinkle with salt and pepper and return to oven for another 20-25 minutes. (you may also combine and roast everything at once to save time!)
