- 1 cup cauliflower
- 1 zucchini - chopped
- 1 cup broccoli florets
- 1 yellow squash - chopped
- 1 bunch kale - washed and chopped
- 1/4 cup slivered almonds
- 1 tbsp olive oil
Dressing Ingredients
- 1 cup mayonnaise or Vegenaise
- 1/2 cup full-fat coconut milk
- 2 cloves garlic - crushed into paste
- 3 tbsp fresh parsley
- 2 tbsp fresh dill
- 1 tbsp fresh lemon juice
- 1/2 tsp onion powder
- 1/2 tsp sea salt

Instructions
- Preheat oven to 400 degrees F. Spread all veggies except the kale out on a baking dish and coat with olive oil, garlic, salt, and pepper. Roast veggies for about 30 minutes or until tender (stirring half-way through). Add kale during the last 10 minutes.
- In a bowl, combine all Herb-Ranch dressing ingredients and mix well. Serve roasted veggies in a bowl topped with slivered almonds and a drizzle of Herb-Ranch dressing.
