  1. Preheat oven to 400 degrees F. Spread all veggies except the kale out on a baking dish and coat with olive oil, garlic, salt, and pepper. Roast veggies for about 30 minutes or until tender (stirring half-way through). Add kale during the last 10 minutes.
  2. In a bowl, combine all Herb-Ranch dressing ingredients and mix well. Serve roasted veggies in a bowl topped with slivered almonds and a drizzle of Herb-Ranch dressing.
