Ingredients
- 2 tbsp extra virgin olive oil , divided
- 1 large sweet potato , sliced into half moons
- 1 cup cooked brown or green lentils
- 3 cups arugula
- ¼ cup crumbled feta cheese
- 2 tbsp hemp hearts
- 2 tbsp balsamic glaze

Instructions
- Preheat the oven to 400F.
- Toss the sweet potato with 1 tablespoon olive oil, and season with salt and pepper. Roast for 20 minutes, or until tender.
- Once cooked, add the sweet potatoes and lentils to a bowl with the arugula.
- Top with feta cheese and hemp hearts. Drizzle with the balsamic glaze and remaining olive oil. Enjoy!
