Ingredients

extra virgin olive oil

large sweet potato
, sliced into half moons

cooked brown or green lentils

arugula

crumbled feta cheese

hemp hearts

balsamic glaze
Instructions
Preheat the oven to 400F.
Toss the sweet potato with 1 tablespoon olive oil, and season with salt and pepper. Roast for 20 minutes, or until tender.
Once cooked, add the sweet potatoes and lentils to a bowl with the arugula.
Top with feta cheese and hemp hearts. Drizzle with the balsamic glaze and remaining olive oil. Enjoy!
