  1. Preheat the oven to 400F.
  2. Toss the sweet potato with 1 tablespoon olive oil, and season with salt and pepper. Roast for 20 minutes, or until tender.
  3. Once cooked, add the sweet potatoes and lentils to a bowl with the arugula.
  4. Top with feta cheese and hemp hearts. Drizzle with the balsamic glaze and remaining olive oil. Enjoy!
