Ingredients
- 2 sweet potatoes , cubed
- 1 head broccoli , cut into florets
- 1 red onion , thinly sliced
- 2 chicken breasts , cubed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp cumin
- 1 pinch sea salt + pepper
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil or avocado oil

Instructions
- Start by lining a baking sheet with parchment paper. Preheat the oven to 375 degrees F.
- Add the cubed sweet potato, broccoli florets, red onion, and cubed chicken to the lined baking sheet.
- Season with the garlic powder, onion powder, oregano, cumin, salt, and pepper.
- Drizzle with the balsamic vinegar and oil.
- Bake for 25-30 minutes or until the chicken is completely cooked and the sweet potatoes are tender.

Trying this tonight
Very easy and quick to pull together, and I loved the seasonings. However, even though I diced my sweet potatoes into pretty small pieces, they could have probably used another 20 minutes to get more tender. They were just shy of still being raw. But if I had cooked the whole sheet pan longer, the chicken would have been very overcooked and dry. I didn’t peel my sweet potatoes, so maybe that was the issue?
Thanks for the heads up. I think, when I make this tonight, I will start the potatoes for at least 20 minutes before adding everything else to the pan.
I had the same problem even though I peeled and cubed mine. I think next time I will put everything in the crockpot or instapot to let the potatoes get tender and the flavors infuse more. If I donit in the oven I’m going to start the potatoes for a good 10-15 min., then pull out and add the rest.
Hi Summer! Thank you for your feedback. ? Sometimes cook times vary depending on the oven, so it could be that, or peeling might affect the cook time as well. One tip could be to put the potatoes in the oven first and allowing them to cook a bit before adding the chicken – you could also try par-boiling the potatoes before putting them in the oven. I usuat microwave the cubed sweet potatoes for about 5 minutes, covered with a little water, to start the cooking process. This usually works well for me ?
I have this same issue. I typically will steam my veggies that I know will take longer in the microwave for a few minutes before throwing them on the pan to bake.
My favorite way to fix this quickly is to pop the diced potatoes in the microwave for a few minutes.. while I’m prepping the rest of the ingredients.. bang it together and voila! Dinner’s ready in 20!

If you slice the sweet potatoes about 1/4” thick they will cook in about 15-20 min. Cubes are thicker and will take longer but slices are quick cooking.
Ladies, quick question……do we need to cook the broccoli first….I did not see any comments about that so I just want to make sure. I am cooking for a Chef 🙁
This is one of our weekly staples now. So ready to make and so healthy. I cook the sweet potatoes for 20 minutes first then add everything else and cook for another 20. Yummy!
