Ingredients
- 2 medium sweet potatoes , cubed (pre-baked)
- 1 bulb roasted garlic (see cooking directions below)
- 1/2 small sweet yellow onion , chopped
- 4 cups bone broth
- 1/2 tsp sea salt
- 1 cup full-fat unsweetened coconut milk
- cooked, crumbled bacon (for topping)

Instructions
- Add the cooked and cubed sweet potatoes, roasted garlic cloves, yellow onion, bone broth, and sea salt to a stockpot over medium heat. Bring to a simmer and cook for 15 minutes.
- Remove from heat and stir in the coconut milk.
- Using an immersion blender (or transfer to a blender), blend until smooth.
- Serve with cooked and crumbled bacon.
How to Prep Roasted Garlic
- Preheat the oven to 400 degrees F and peel the outer paper-like layer off the bulb of garlic.
- Cut roughly ¼ inch off the top of the garlic bulb and add to the center of a piece of foil. Drizzle with olive oil or avocado oil.
- Wrap in the foil and place in a baking dish. Roast for 35-40 minutes, or until the garlic starts to soften.
- Cool and then squeeze to remove each clove.
When you say bone broth I buy the concentrate so do you mean 1 cup of it when it’s mixed with water?
Hi Angela! This recipe calls for 4 cups of liquid bone broth. So for the concentrate, you may need to use about 4 teaspoons per cup of water — or more/less depending on how flavorful you like it. I hope this helps! Please let us know how you like the recipe after giving it a try. 🙂
This was delicious! I used leftover homemade chicken soup that was loased with fresh thyme, parsley, rosemary and garlic.

This is delicious!! Roasted the onion, garlic, and some celery right along with the potatoes at 350 for 40 minutes. Used vegetable broth over bone broth as it’s more readily available. Used Soy Milk as the family is not a fan of coconut. Soo good on a cold Wisconsin Sunday!!

Made this today. It’s naturally sweet, so I used poultry spice plus added black pepper, paprika and hot red chili pepper. Yum! Besides bacon, also chopped parsley on top.
