Ingredients
- 2 tbsp ghee divided
- 1/4 yellow onion thinly sliced
- 2 eggs
- 2 cups spinach
- 1/2 avocado sliced
- 2 tbsp cheese shredded
- sea salt + pepper to taste

Instructions
- Start by heating a large skillet over medium heat with 1 tbsp of the ghee. Add the sliced onion and cook for about 10 minutes or until the onions begin to brown.
- While the onions are cooking, add the other tablespoon of ghee to another skillet and scramble the eggs. Set aside.
- Assemble the bowl with the spinach as your base and top with the onions, scrambled eggs, sliced avocado, and shredded cheese. Season with sea salt and pepper.
Do you have substitution suggestions for the avacado?
Hi Elizabeth! A couple things you could try in this recipe are edamame or hummus – or you could simply leave it out. ?
This recipe was quick and easy and delicious! I did not have ghee so I just used butter.

Hi! I have a question/comment in relation to all recipes but couldn’t find a place to write it. I read a comment on another recipe about why you don’t post nutritional information, and on one hand I get that, but for those of us, and I can imagine that we are many, who are trying to follow a specific diet and/or weight-loss plan, it would certainly help! I have a year-long membership but don’t feel that I want to chance any of these lovely recipes because I don’t know what’s in them. We’re all counting or not counting specific things (calories, fat, protein), but shouldn’t we be able to make the choise to read the nutritional information or not ourselves instead of being told we can’t have it? This factor is definitely a HUGE negative for me and the reason I haven’t tried any of these great recipes.
I love my workouts with Robin, though! I just don’t feel like I’m getting my full money’s worth here…

We definitely want to find a balance between respecting those for whom nutritional information/calories can be a negative trigger while also respecting the needs of individuals who need to track specific things for health reasons. If you fall into the latter, we recommend copying/pasting the ingredients into an app (such as MyFitnessPal) to find the specific information you need. That being said, we are always looking for ways to best serve our entire community, and while we are not currently posting the nutritional information of our recipes, we have taken this feedback down into something to consider as we tweak our app moving forward. Just some more feedback in nutrional analysis. I agree with Jordana, having the information available wod be great. I have used and lived the recipes and do plug the ingredients into another app. However would likely use the bundles a lot more without having nti take the extra step.

I too am interested in the nutritional info on recipes. I’m 2 months in here and have not used many recipes for that reason. Today I was really happy to see in my inbox an email with a TBL survey. One question referred to nutritional info on recipes. Though not a definite to happen I was pleased to see that it’s on the TBL radar.
BTW, not a good idea to read through recipes after a work out like today’s! It’s like hitting the grocery store when I’m hungry. 🙂
I’m brand new, and surprised that the nutritional info is not attached to each recipe. If I knew the macros/recipe, it would certainly be easier to choose which recipe would fit into my day.

Is ghee healthier than regular butter?

This was even more delicious then I expected! I used butter and started cooking the onions then just threw the eggs in the same skillet and let them cook together. Definitely will be making this again!

Hi, is there a reason the spinach is not sautéed in this recipe? From my understanding, cooked spinach is better for you than raw.

Hi Jill! The spinach should wilt slightly when placed underneath the other ingredients, but you can absolutely cook it to your preference!
We currently do not post nutritional or caloric information because we want to focus more on how whole, real foods nourish our bodies and help us feel our best. We also want to be sensitive to those who find nutritional information triggering, but we also understand that it is helpful or necessary information for others to track. For diving deeper into nutritional information, we currently recommend using a free app such as MyFitnessPal, where you can copy over ingredients from any recipe.
