Start by heating a large skillet over medium heat with 1 tbsp of the ghee. Add the sliced onion and cook for about 10 minutes or until the onions begin to brown.
While the onions are cooking, add the other tablespoon of ghee to another skillet and scramble the eggs. Set aside.
Assemble the bowl with the spinach as your base and top with the onions, scrambled eggs, sliced avocado, and shredded cheese. Season with sea salt and pepper.
