Ingredients
- 1 red bell pepper
- 1 can albacore tuna packed in water - drained
- 1 tbsp quality mayonnaise or Vegenaise
- 1 tsp dijon mustard
- 1 tsp chopped pickles or relish
- salt + pepper

Instructions
- Cut down the sides of the red bell pepper to make 4 large slices. Discard core and seeds. In a small bowl, combine tuna, mayonnaise, pickles, salt, and pepper. Spoon tuna mixture onto red pepper slices and enjoy!
