Ingredients
- coconut oil or avocado oil (for cooking)
- 1 chicken breast , cubed
- 2 tbsp yellow onion , chopped
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- pinch of sea salt
- 2 tbsp Ranch dressing (like Primal Kitchen brand)
- 2 cups fresh spinach (or kale)
- shredded cheese of choice (optional, for serving)

Instructions
- Start by heating a large skillet over medium heat with the coconut or avocado oil and add the cubed chicken breast. Sauté for about 7 minutes or until cooked through.
- Add the onion, oregano, garlic powder, and sea salt. Remove from heat and add the ranch dressing, stirring to coat the chicken. Set aside.
- Next, sauté the spinach in additional oil until wilted.
- Serve with the cooked chicken and sprinkle with cheese.
- Serving Suggestion: Serve with sliced avocado if desired!
Quick and easy to make. I actually added red peppers for more veggies and I think this recipe you can play around with adding more or different veggies.
