Start by heating a large skillet over medium heat with the coconut or avocado oil and add the cubed chicken breast. Sauté for about 7 minutes or until cooked through.
Add the onion, oregano, garlic powder, and sea salt. Remove from heat and add the ranch dressing, stirring to coat the chicken. Set aside.
Next, sauté the spinach in additional oil until wilted.
Serve with the cooked chicken and sprinkle with cheese.
