Ingredients
- 1 can tuna*
- 1/2 cup carrots - cut into matchsticks
- 1 red bell pepper - thinly sliced
- 1/2 cup shredded purple cabbage
- 4-6 pieces napa cabbage
- 1 tbsp high-quality mayonnaise or Vegenaise
- 1 tsp dijon mustard
- 1 tsp chopped pickles or relish
- salt + pepper to taste

Instructions
- In a small bowl, combine tuna, mayonnaise, mustard, pickles, salt, and pepper. Spoon tuna mixture onto cabbage and top with carrots, bell pepper, and purple cabbage. Repeat with remaining ingredients.
- *For a vegetarian option, substitute tuna with chickpea "tuna" salad from our April 2017 recipe bundle.
Vegan option: For tuna, substitute Gardein Chik’n strips, chopped or Vegan shrimp, etc. Also, we are not mayo (vegan or otherwise) fans so we just left it out. Can also substitute a teriyaki sauce for the mustard. EXCELLENT recipe to use and modify to taste!
