Ingredients
- coconut or avocado oil for cooking
- 1 medium red bell pepper seeded and sliced
- 1 medium yellow bell pepper seeded and sliced
- 1 small red onion thinly sliced
- 1 14.5 oz can fire-roasted diced tomatoes
- 1/4 cup bone broth
- 6 turkey sausages (sub with tempeh for a vegetarian option)
- cauliflower rice for serving (easy prep method below!)

Instructions
- Start by heating a skillet over medium heat with the cooking oil and cook the peppers and onion for about 10 minutes or until they start to brown.
- Add the diced tomatoes and bone broth and bring to a simmer. Cook for another 5-7 minutes.
- While the peppers, onions, and tomatoes are cooking, heat a skillet over medium heat with cooking oil and cook the turkey sausage according to the package directions.
- Slice the sausages and then serve with the peppers, onion, and tomatoes over cauliflower rice.
How to Make Cauliflower Rice
- Simply cut a head of cauliflower into florets and add to a food processor. Process until it turns into “rice.” Add to a skillet with a drizzle of olive, coconut, or avocado oil, and saute for about 5 minutes.

Yum! This was just what we needed to spark up our meals without getting complicated! I used sun-dried tomatoes instead and topped with spinach at the last minute to add “color”. I will definitely make this again! It made 4 servings for us.

This was delish! And quick & easy too. ?? I used a bag of frozen cauli rice to make it even quicker and added it to the pan with the veggies instead of prepping it separately and it was yum! Once everything was all combined I seasoned to taste with some Himalayan sea salt, pepper, onion and garlic powder. Will make this again! Thanks for the yummy recipe!
