Ingredients
- 1 ½ cups cooked and cooled brown rice
- 1 tbsp sesame oil
- 2 medium chicken breasts , cut into ½ inch cubes
- 1 large egg , whisked
- 3 cloves garlic , finely chopped
- 1 tsp ginger , finely chopped
- 2 green onions , thinly sliced
- ½ cup celery , thinly sliced
- ½ cup carrots , thinly sliced
- ½ cup chopped broccoli
- 1 cup chopped pineapple
- 1 tbsp soy sauce , or tamari if gluten-free

Instructions
- In a large skillet, heat the sesame oil over medium heat. Add the chicken and cook for 4 to 5 minutes, or until fully cooked. Remove from the pan, and transfer to a plate.
- Return the pan to the stove, and add the whisked egg, using a spatula to scramble the egg. Add to the chicken.
- Add garlic, ginger, and green onions, cooking for 2 to 3 minutes. Add the celery, carrots, broccoli, pineapple, cooking for 5 to 6 minutes, stirring frequently until softened.
- Add the rice and soy sauce, return the chicken and egg to the skillet, cook for 2 to 3 minutes until warmed through.
- Divide fried rice into four bowls, serve, and enjoy!
