- 1 packet quick rise yeast (such as Red Star)
- 3/4 cup warm water
- 1/4 cup olive oil
- 1 egg
- 2 1/2 cups gluten free flour (King Arthur or Bob’s Red Mill are good options!)
- 1 tsp garlic powder
- 1/2 tsp oregano
- 1 tsp sea salt
- 1/2 cup your favorite marinara sauce or tomato paste
- 1/2 cup homemade cashew cheese (see recipe below)
- 1/2 cup shredded mozzarella cheese (optional)
- Toppings: Freshly chopped pineapple, cooked and crumbled bacon, arugula, fresh basil

- 1 tbsp lemon juice freshly squeezed
- 1 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 pinch sea salt

Instructions
- Start by lining a pizza pan with parchment paper and set aside.
- Add the yeast, warm water, olive oil, and egg to a mixing bowl and whisk. Fold in the gluten-free flour, garlic powder, oregano, and salt. Mix until well combined.
- Place a damp towel or paper towel over the mixing bowl and let the dough rise for 30-60 minutes.
- While the dough is rising, make the cashew cheese by adding all the ingredients to a food processor or high-speed blender and blend until a smooth “ricotta-style” cheese forms.
- Next, preheat the oven to 425 degrees F. Place the dough onto the lined pizza pan and flatten. Bake for 10 minutes without any toppings.
- Remove from the oven and add the sauce, cashew cheese, shredded mozzarella (if using), and toppings of choice. Bake for an additional 10-15 minutes. (Cooking Tip: If using basil or arugula, add to the pizza with just 3-minutes of cook time remaining.)
- Cool for 5 minutes and then slice into 8 pizza slices. Enjoy!
