Ingredients
- 2 cans albacore tuna packed in water - drained
- 2 tbsp dijon mustard
- 2 tbsp mayonnaise (Greek yogurt or Vegenaise may be substituted)
- 1/4 cup raisins
- 1/4 cup fresh parsley - chopped
- 2 tbsp lemon juice
- 2 stalks celery - chopped
- salt + pepper to taste

Instructions
- Soak raisins in water for about 10 minutes to soften and plump. In a large bowl, combine the remaining ingredients and mix well. Drain raisins and add to the tuna mixture. Serve over a bed of greens, on cucumber rounds, or with healthy crackers.
Super spicy. The Dijon overpowers it. Next time I’ll cut the Dijon to 1-2 teaspoons.
