albacore tuna packed in water
– drained

dijon mustard

mayonnaise
(Greek yogurt or Vegenaise may be substituted)
1/4
cup
raisins
1/4
cup
fresh parsley
– chopped

tbsp
lemon juice
2
stalks
celery
– chopped
salt + pepper
to taste
Instructions
Soak raisins in water for about 10 minutes to soften and plump. In a large bowl, combine the remaining ingredients and mix well. Drain raisins and add to the tuna mixture. Serve over a bed of greens, on cucumber rounds, or with healthy crackers.
