- 20 pitted Medjool dates
- 1 cup raw cashews
- 1/4 cup pure maple syrup
- 1/4 cup raw unsweetened cacao powder (plus more for coating the bites)
- 1 tsp pure peppermint extract

Instructions
- Add the dates and cashews to a high-speed blender or food processor and blend for about 30 seconds or until the mixture comes together.
- Add the remaining ingredients and blend again until all the ingredients are well-combined.
- Transfer the mixture into a mixing bowl and set in the fridge for 20 minutes to chill.
- Once chilled, roll the dough into 20 bite-sized rounds and roll in the extra cocoa powder.
- Store in the fridge and enjoy as a delicious and healthy snack!
I’d love to try this, but can’t have mint. Any other flavor suggestions?
I bet you could use any extract, vanilla, almond even orange. The only thing is mint is much stronger…so it might take a touch more vanilla, but I’d go lighter with almond and orange.
I used peppermint essential oil. DELICIOUS!
How much did you use of the essential oil the same as it says or less?

I do not like dates. Any substitute?
Hi Ann! We haven’t tried this before, but dried figs can often be a good substitute for dried dates (as well as raisins). Although please note that the texture/flavor may change a bit when swapping out the dates. Let us know if you give this a try!
