Instructions
  1. Add the dates and cashews to a high-speed blender or food processor and blend for about 30 seconds or until the mixture comes together. 
  2. Add the remaining ingredients and blend again until all the ingredients are well-combined. 
  3. Transfer the mixture into a mixing bowl and set in the fridge for 20 minutes to chill. 
  4. Once chilled, roll the dough into 20 bite-sized rounds and roll in the extra cocoa powder. 
  5. Store in the fridge and enjoy as a delicious and healthy snack!

      I bet you could use any extract, vanilla, almond even orange. The only thing is mint is much stronger…so it might take a touch more vanilla, but I’d go lighter with almond and orange.

      Hi Ann! We haven’t tried this before, but dried figs can often be a good substitute for dried dates (as well as raisins). Although please note that the texture/flavor may change a bit when swapping out the dates. Let us know if you give this a try!
