pitted Medjool dates

raw cashews

pure maple syrup

raw unsweetened cacao powder
(plus more for coating the bites)

pure peppermint extract
Instructions
Add the dates and cashews to a high-speed blender or food processor and blend for about 30 seconds or until the mixture comes together.
Add the remaining ingredients and blend again until all the ingredients are well-combined.
Transfer the mixture into a mixing bowl and set in the fridge for 20 minutes to chill.
Once chilled, roll the dough into 20 bite-sized rounds and roll in the extra cocoa powder.
Store in the fridge and enjoy as a delicious and healthy snack!
