Ingredients
- 1 cup panko
- 4 tbsp Parmesan cheese
- 1 lemon - all the zest
- 1/2 cup pecans
- 1 egg - beaten
- 3 tbsp grass-fed butter (I prefer Kerrygold)
- 4 halibut fillets

Instructions
- Combine panko, cheese, lemon zest, and pecans in a shallow dish. Set aside.
- Beat the egg and place in a shallow dish. Dry the halibut fillets, then dip in egg and then dredge in the pecan mixture to coat well. Heat butter in a large skillet over medium heat, add fish, turning once. Cook approximately 6 minutes per side.
This was fantastic! I used Haddock instead of Cod and baked it along side of some roasted brussel sprouts. Delish!
Yum! Haddock sounds like a delicious option!
