Ingredients
- 1 tbsp sesame oil
- 2 small chicken breasts , cut into 1 inch cubes
- 1 medium red bell pepper , diced
- 1 head butter lettuce , leave removed
- 2 green onions , chopped
- ¼ cup peanuts , chopped
- fresh cilantro (coriander) , to garnish

- ¼ cup peanut butter , creamy
- 1 tsp garlic powder
- ½ tsp ginger , ground
- 1 lime , juiced
- 1 tbsp maple syrup
- 2 tbsp soy sauce or gluten-free tamari
- 2-3 tbsp water

Instructions
- Heat the sesame oil in a nonstick pan over medium heat. Add the chicken and bell pepper. Season with salt and pepper.
- Cook for 7-9 minutes, or until the chicken is fully cooked. Set aside.
- Meanwhile, whisk together the peanut butter, garlic powder, ginger, lime juice, maple syrup, soy sauce, and water until smooth.
- Divide the chicken onto the lettuce leaves, top with peanut sauce, green onions, chopped peanuts, and cilantro. Enjoy!
