  1. Heat the sesame oil in a nonstick pan over medium heat. Add the chicken and bell pepper. Season with salt and pepper.
  2. Cook for 7-9 minutes, or until the chicken is fully cooked. Set aside.
  3. Meanwhile, whisk together the peanut butter, garlic powder, ginger, lime juice, maple syrup, soy sauce, and water until smooth.
  4. Divide the chicken onto the lettuce leaves, top with peanut sauce, green onions, chopped peanuts, and cilantro. Enjoy!
