Ingredients
- 2 tbsp olive oil
- 1 medium yellow onion , diced
- 3 cloves garlic , chopped
- 2 carrots , chopped
- 3 stalks celery , chopped
- 1 medium red bell pepper , chopped
- 3 tbsp chili powder
- 1 tsp cumin
- ½ tsp oregano
- ¼ tsp turmeric
- 3 tbsp rolled oats
- 1 28 oz can diced tomatoes , no salt added
- 3 cups vegetable broth , no salt added
- 1 14 oz can black beans , drained and rinsed
- 1 14 oz can chickpeas , drained and rinsed
- 1 14 oz can red kidney beans , drained and rinsed
- 1-2 squares 70% dark chocolate
- salt and pepper , to taste

Instructions
- Heat the oil in a pot over medium heat.
- Add the onion, cooking for 5-6 minutes, or until it begins to soften.
- Add the garlic, carrots, celery, and pepper, cooking for an additional 5-6 minutes.
- Add the chili powder, cumin, oregano, and turmeric, stirring to evenly distribute.
- Add the oats, tomatoes, broth, and beans.
- Bring to a boil, and reduce to simmer for 20 minutes, or thickened to your preferences.
- Add the chocolate, stirring until melted. Enjoy!
