Ingredients
- 1 tbsp avocado oil
- 1 lb ground turkey
- 1 15oz can black beans rinsed and drained
- 1 8oz package enchilada sauce (like Frontera brand)
- 1 cup spinach chopped
- 3/4 cup cheddar cheese shredded
- cilantro freshly chopped for serving
- lettuce leaves for serving in "cups"
- tortilla chips for serving
- guacamole for serving

Instructions
- Start by heating a large skillet over medium heat with the oil. Add the ground turkey and saute for 7-10 minutes or until no longer pink.
- Add the black beans, enchilada sauce, and spinach. Cook for another 3-5 minutes.
- Remove from heat and sprinkle with cheese.
- Garnish with cilantro and serve with desired toppings. Tip: For healthier chip options, try Terra chips or Siete brand cassava flour chips!
I added in torn corn tortillas and served this for dinner tonight, and it was great!
I made this last night. It was delicious and quick and easy! I served it over a bed of lettuce and brown rice.

This was great. This is definitely going into our meal rotation! My boyfriend loved it as well. We topped it with smashed tortillas to add some crunch.
I didn’t have black beans or spinach, substituted with kidney beans and finely chopped kale. So good! And a hit with the whole family.

Made this tonight without the cheese..used ground chicken as that is what I had, increased spinach..yumm..thank you so.much

Just had this for dinner tonight – so yummy! Husband used it as taco filling, I put mine on top of a salad. Definitely recommend!
So good! I ate it with brown rice and extra spinach & tomatoes. My kids stuffed it into tortillas and crunchy taco shells. BIG hit!

This was so quick and easy. I didn’t have enchilada sauce on hand so I googled a recipe, which was easy and healthy too. Very tasty, health and on the table in less than half an hour!

I made this last night. It was very good. I had never heard of Frontera enchilada sauce. Found it at a local grocery store after I looked it up online. It comes in a “pouch.” It was easy to use and wasn’t too spicy for me. Quick & easy!

I had this two nights in a row because it was so good! I added red and green peppers, onion and some roasted corn instead of spinach and it was AMAZING!

Substituted enchilada sauce for salsa I had in the fridge, and added a couple of chillies from my garden. Super quick, super easy, super flavourful – definitely a winner!

This was delicious!!! I added onion and bell pepper while sauteing the meat (used ground chicken instead of turkey because that’s what I had!). My kids LOVED it in quesadillas and I served mine on top of lettuce with lots of toppings.

My 5 year old said, “This is the best meal ever! I want you to make it again and again” (that’s a winner in my book)! I served it with 50/50 cilantro lime rice/cauliflower rice, guacamole, and Siete chips – yum!

Tasty and so quick and easy to pull together. I’m not a fan of cooked spinach, so I just left that out.
I made this tonight because it sounded amazing! I made a slight tweak…I used jackfruit instead of turkey..making this a vegetarian delight!! I served it over cilantro and lime rice with only a tiny bit of cheese. I also made a lime cilantro yogurt to use as a garnish, but it was so good, I forgot to use it! This will be a new kitchen staple!! Thanks!!
