freshly chopped for serving

Instructions
Start by heating a large skillet over medium heat with the oil. Add the ground turkey and saute for 7-10 minutes or until no longer pink.
Add the black beans, enchilada sauce, and spinach. Cook for another 3-5 minutes.
Remove from heat and sprinkle with cheese.
Garnish with cilantro and serve with desired toppings. Tip: For healthier chip options, try Terra chips or Siete brand cassava flour chips!
