Ingredients
- 1 whole chicken
- 3 tbsp ghee melted
- 2 cloves garlic chopped
- 1 tbsp fresh rosemary chopped
- 1 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 large sweet potato cubed
- 1 yellow onion quartered
- 2 carrots sliced
- avocado oil for drizzling

Instructions
- Start by preheating the oven to 450 degrees F and line a baking dish with parchment paper.
- Add the melted ghee, garlic, rosemary, sea salt, and black pepper to a mixing bowl and whisk well.
- Use the ghee mixture to season the entire chicken and set aside.
- Add the cubed sweet potato, quartered onion, and sliced carrots to the base of the baking dish and drizzle with avocado oil.
- Add the seasoned chicken on top of the veggies and cook for 15 minutes before reducing the temperature to 350. Once the temperature is set to 350, cook the chicken for 20 minutes per pound or until the chicken is completely cooked, and the juices run clear.
- Allow the chicken to rest for 20 minutes before serving and enjoy with the cooked veggies!
I made this with butter instead of ghee, and it is so delicious!! Could have cooked it a few minutes less, but still moist and wonderful.

Mmmm good! Just made it for dinner and it was so good. I used regular potatoes because that’s all I had and they cooked all together perfectly. Made gravy with the left over juice!
This was a great simple recipe. I added butternut squash and some miniature potatoes too. Great roast chicken that we have managed to use in 3 more family meals as leftovers!

Loved this. I only had small potatoes, olive oil, dried rosemary and minced garlic in a jar. It worked great! Enough for tomorrow too!

SO delicious! I used pasture raised chicken and everything in the recipe but garlic. I will definitely make this again! with leftovers I made chicken salad with avocado mayo. Delicious!!
