Start by preheating the oven to 450 degrees F and line a baking dish with parchment paper.
Add the melted ghee, garlic, rosemary, sea salt, and black pepper to a mixing bowl and whisk well.
Use the ghee mixture to season the entire chicken and set aside.
Add the cubed sweet potato, quartered onion, and sliced carrots to the base of the baking dish and drizzle with avocado oil.
Add the seasoned chicken on top of the veggies and cook for 15 minutes before reducing the temperature to 350. Once the temperature is set to 350, cook the chicken for 20 minutes per pound or until the chicken is completely cooked, and the juices run clear.
Allow the chicken to rest for 20 minutes before serving and enjoy with the cooked veggies!
