Ingredients
- 1/2 cup quinoa , measure when cooked
- 1 cup cooked shredded chicken
- 1/4 small red onion , chopped
- 1 cooked sweet potato , cubed
- 1/2 avocado , sliced
- 2 tbsp homemade maple tahini dressing (see recipe below)
- pinch of sea salt

- 1/4 cup tahini
- 2 tbsp raw apple cider vinegar
- 2 tsp pure maple syrup
- 1 clove garlic , chopped
- water to thin to the consistency you like
- pinch of sea salt to taste

Instructions
- Note: To make shredded chicken, place the chicken breasts in boiling water, and boil for 10-12 minutes or until the center is no longer pink. Remove from the water and add to a bowl. Shred using two forks.
- Assemble the bowl by adding the quinoa to the base of an on-the-go lunch container. Top with the shredded chicken, chopped red onion, cubed sweet potato, and sliced avocado.
- Drizzle with the homemade tahini dressing and season with a pinch of sea salt.
- Enjoy as a delicious and filling on-the-go lunch!
Maple Tahini Dressing Instructions
- Add all the ingredients minus the water and salt to a mixing bowl and whisk.
- Thin with water to the consistency you like and season with a pinch of sea salt.
- Store in the fridge until ready to use.
- Note: You may need to add a teaspoon or two of water when you remove the dressing from the fridge to thin.
Oh my! This is absolutely delicious!! I’m a big tahini fan, granted, but still. So goood!
I adjusted many of the ingredients for the bowl and technically only made dressing as described, but this dressing is amazing!! I will refer to this dressing recipe for many salads in the future! 100% recommend, as I am a tahini fan, too!
