Instructions
  1. Note: To make shredded chicken, place the chicken breasts in boiling water, and boil for 10-12 minutes or until the center is no longer pink. Remove from the water and add to a bowl. Shred using two forks. 
  2. Assemble the bowl by adding the quinoa to the base of an on-the-go lunch container. Top with the shredded chicken, chopped red onion, cubed sweet potato, and sliced avocado. 
  3. Drizzle with the homemade tahini dressing and season with a pinch of sea salt. 
  4. Enjoy as a delicious and filling on-the-go lunch! 
Maple Tahini Dressing Instructions
  1. Add all the ingredients minus the water and salt to a mixing bowl and whisk. 
  2. Thin with water to the consistency you like and season with a pinch of sea salt. 
  3. Store in the fridge until ready to use. 
  4. Note: You may need to add a teaspoon or two of water when you remove the dressing from the fridge to thin.

  1. I adjusted many of the ingredients for the bowl and technically only made dressing as described, but this dressing is amazing!! I will refer to this dressing recipe for many salads in the future! 100% recommend, as I am a tahini fan, too!
