Note: To make shredded chicken, place the chicken breasts in boiling water, and boil for 10-12 minutes or until the center is no longer pink. Remove from the water and add to a bowl. Shred using two forks.
Assemble the bowl by adding the quinoa to the base of an on-the-go lunch container. Top with the shredded chicken, chopped red onion, cubed sweet potato, and sliced avocado.
Drizzle with the homemade tahini dressing and season with a pinch of sea salt.

Maple Tahini Dressing Instructions
Add all the ingredients minus the water and salt to a mixing bowl and whisk.
Thin with water to the consistency you like and season with a pinch of sea salt.
Store in the fridge until ready to use.
Note: You may need to add a teaspoon or two of water when you remove the dressing from the fridge to thin.
