Ingredients
- 1 cup rolled oats
- 1 cup unsweetened coconut flakes
- 1/3 cup pitted Medjool dates
- 1/2 tsp vanilla extract
- 1/2 cup natural peanut butter
- pinch of sea salt
- 2 tbsp dairy-free chocolate chips (optional)

Instructions
- Place oats, coconut, dates, vanilla, peanut butter and sea salt in a food processor and process until ingredients are well mixed and "dough" begins to clump. Add chocolate chips and pulse a few more times until well combined.
- Wet fingers and roll dough into 15 walnut-sized energy "balls. " Store in an air tight container in the refrigerator for up to a week.
Used 1/4 C. Coconut, added a swirl of honey. These are so yummy!
I had leftover coconut butter from making another recipe and used half that, half almond butter in place of the peanut butter, as I had no peanut butter. Tasty.
