- 1 tbsp pure maple syrup
- 3/4 cup almond butter
- 1 tsp pure vanilla extract
- 1 cup rolled oats
- 1 tbsp hemp seeds
- 1 tsp ground cinnamon

Instructions
- Start by adding the maple syrup, almond butter, and vanilla to a stock pot and heat over low heat. Stir until well combined.
- Remove from heat and stir in the remaining ingredients.
- Roll the dough into four balls and then place on a parchment-lined baking sheet. Press the cookies down to flatten.
- Transfer the cookies to a glass container, and store in the fridge until ready to enjoy.
- Enjoy with a piece of fruit for an easy breakfast option!
Love these cookies. So easy to make and really filling. Great for popping in your bag for after exercise snack. 🙂 I added more maple syrub than mentioned as one tbsp didn’t seem enough to bind the ingredients.

My kids liked these, and I found them to be so-so. I think I measured accurately, though mine turned out a bit dry. If I make them again, I might add a bit more maple syrup as mentioned. They were handy to have in the fridge for a quick snack.
If they’re a little crumbly try adding a Tbsp of water. I’ve found it works without changing the flavor or adding more sugar. Hope that helps.
What can you replace for the hemp seeds?
Hi Maria! You can substitute with flax/chia, or even chopped nuts, or choose to leave them out. ?
What can I use instead of oats. I am allergic and a lot of these recipes use oats
Hi Phyllis! Great question. While we haven’t personally tried this, some substitution possibilities include cooked quinoa, wheat berries, or amaranth. Just note that the flavor and texture may change slightly. Let us know if you end up giving this a try! ?
I use shredded unswerving coconut and a little more liquid in place od oats!
I love these! They’re easy and really tasty. The last time I made them, I added a few dark chocolate chips and had them for a sweet snack after dinner.
Any idea if these are freezable?
Hi Janice! Freezing these cookies might alter their texture a bit – however, we personally haven’t tried it yet. Let us know if you give it a try!

Wow, these are super easy and delicious. As others have said, I’d definitely up the maple syrup (or honey) to 2 Tbsp and add at least 2 Tbsp of water. I think I added a little more than that. These are way easier than making regular cookies!
Just made these for the first time. They were too dry to form into cookies so I treated the mix a bit like granola – put 1/2 cup in a bowl, added oat milk and had “cereal”. Yum! I will try some additional liquid next time.

Soooo yummy! As the others have said above, it was a bit trial and error, adding a bit more water and maple syrup (I actually used agave syrup instead as I’d run out of maple), but these were quick and easy to do for a make-ahead breakfast on the go! Wish I’d known about these when breastfeeding! Good as an alternative to overnight oats too. I also added some raw organic cacao nibs for some crunch, and some of my turmeric/maca/lucuma blend. Next time I think I’ll add some chopped dried fruit and hazelnuts. Thanks again TBL for the breakfast inspo!
