- 4-6 cups butter lettuce
- 1 cup cherry or grape tomatoes
- 1 cup green beans - trimmed
- 4 slices deli ham (preferable nitrate-free), chopped
- 1 lb red potatoes
- 1 avocado - sliced

- 1/2 shallot - minced
- 2 tbsp dijon mustard
- 1 tbsp fresh thyme
- 2/3 cup extra virgin olive oil

Instructions
- Fill a medium pot with water, add potatoes, and bring to a boil. Boil potatoes until tender when pierced with a fork. While potatoes cook, steam or boil green beans until tender, yet crisp.
- In a separate bowl or jar, combine vinegar, shallot, dijon mustard, thyme, and olive oil. Whisk well. Add butter lettuce to a large serving bowl. Top with steamed green beans, boiled (and sliced) red potatoes, chopped ham, sliced avocado, and tomatoes. Toss with desired amount of dressing.
