Ingredients
- 2 chicken breasts cooked and sliced
- 1 can black beans
- 2 handfuls mixed salad greens , or lettuce of your choice
- 1/2 avocado , peeled and diced
- 1/2 tomato , diced
- 2 tbsp cilantro
- 2 tbsp chili powder
- 1 tsp cayenne pepper
- 1 tsp cumin

Instructions
- Reheat cooked chicken in a small pan. Season with chili powder, cayenne pepper and cumin.
- Heat black beans in a small saucepan on the stove until warm.
- Fill the bottom of shallow bowls with lettuce, then add beans and chicken. Top with avocado, tomato and cilantro. Sprinkle with hot sauce if desired.

- Hot sauce can be a great source of flavor on salads, eggs, or tacos - just make sure to choose a good brand. Look for products with ingredients you recognize - and the fewer ingredients the better. Avoid products containing sugar or chemical additives.
This looks so good! I’m a huge fan of Mexican and Central American food, so this is going to be the perfect lunch for me!
