Ingredients
- 1 15 oz can white beans , drained and rinsed
- ¼ cup oil-packed sun dried tomatoes drained and finely chopped, oil reserved
- ¼ English cucumber , diced
- ¼ medium red onion , finely chopped
- 1 medium orange bell pepper , diced
- ⅓ cup pitted kalamata olives , halved
- ¼ cup feta cheese , crumbled
- ¼ cup fresh parsley , chopped
- 4 cups arugula
Dressing
- 2 tbsp red wine vinegar
- 2 tbsp oil from sun dried tomatoes
- 1 tsp dijon mustard
- ¼ tsp dried oregano

Instructions
- In a large bowl, combine the white beans, sun dried tomatoes, cucumber, red onion, bell pepper, olives, cheese, and parsley, tossing to combine.
- Make the dressing: whisk together the red wine vinegar, oil, mustard, and oregano. Drizzle over the bean mixture.
- Toss the beans with the arugula before serving.
