Instructions
In a large bowl, combine the white beans, sun dried tomatoes, cucumber, red onion, bell pepper, olives, cheese, and parsley, tossing to combine.
Make the dressing: whisk together the red wine vinegar, oil, mustard, and oregano. Drizzle over the bean mixture.
Toss the beans with the arugula before serving.
