- 1/4 yellow onion thinly sliced
- 2 slices bread gluten free if desired
- 1/2 avocado sliced
- 2 slices tomato
- 2 tbsp balsamic vinegar
- sea salt + pepper to taste
- hemp seeds sprinkle for serving

Instructions
- Start by heating a medium skillet over medium heat with the ghee. Add the onion and saute for 5-7 minutes or until the onions begin to brown.
- Toast the bread and then add the sliced avocado and mash.
- Top with the onions, tomato, and drizzle with balsamic vinegar.
- Season with sea salt and pepper, and sprinkle with hemp seeds. Enjoy!

I eat this almost every morning with an egg on top instead of the onion. I need lots of protein for breakfast!
