Ingredients
- 1/2 cup chia seeds
- 1 1/2 cups unsweetened almond milk
- 1/4 tsp pure almond extract
- 2 tbsp pure maple syrup
- 1/4 cup mango chunks (plus more for serving)
- sliced coconut for serving (if you cannot find sliced coconut chunks, you can use unsweetened shredded coconut)

Instructions
- Start by adding the chia seeds to a large mixing bowl with the almond milk, almond extract, and pure maple syrup. Whisk well.
- Pour into a glass jar. Cover and place in the fridge overnight, or for at least eight hours.
- Once a pudding-like consistency forms, serve the chia pudding with mango chunks and coconut.
This was really good and satisfying… warmed up in the microwave was really good too. yum!
