  1. Start by adding the chia seeds to a large mixing bowl with the almond milk, almond extract, and pure maple syrup. Whisk well. 
  2. Pour into a glass jar. Cover and place in the fridge overnight, or for at least eight hours. 
  3. Once a pudding-like consistency forms, serve the chia pudding with mango chunks and coconut.
