Ingredients
- 3 cups rolled oats , gluten free if preferred
- 1 cup unsweetened shredded coconut
- 1 1/2 cups sliced almonds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 2 tbsp chia seeds
- 2 tbsp flax seeds/linseeds , whole
- 1 tbsp cinnamon
- 1 tsp ground ginger
- 1/4 tsp sea salt
- 1/4 cup olive oil
- 1/4 cup honey
- 1/2 cup applesauce
- 1 cup dried fruit (raisins, apricots, cranberries, cherries, and/or blueberries)

Instructions
- Preheat the oven to 325ºF/163ºC. Line a tray with baking paper.
- In a large bowl, combine oat, coconut, almond, pumpkin seeds, sunflower seeds, chia seeds, and flaxseeds.
- In a medium bowl, whisk cinnamon, ginger, sea salt, olive oil, honey, and apple sauce until smooth. Pour over the oats, and mix to combine.
- Bake for 45-60 minutes, stirring every 15 minutes, until golden. Add dried fruit to the warm granola.
- Cool, and store in air-tight containers in the fridge for up to 4 weeks.
- NOTE: Make ~6 cups, about 18-20 servings of 1/3 cup
