Ingredients
- 2 breasts and/or thigh meat from a rotisserie chicken - chopped
- 3/4 fuji apple - cubed
- 1/4 red onion - finely chopped
- 1/4 cup slivered almonds (toast them on the stove for added crunch)
- 1 tbsp mayonnaise
- 2 tsp dijon mustard
- drizzle of honey
- salt + pepper

Instructions
- Combine the chicken, apple, red onion, and almonds in a bowl. In a separate bowl, whisk together mayonnaise, mustard, honey, salt, and pepper. Stir into chicken mixture until well combined. Serve over a bed of lettuce or wrapped in lettuce cups.
This is a good recipe but I leave out the honey and add some dried cranberries.
