Ingredients
- 2 cups cooked brown or green lentils , use canned if preferred
- 2 tbsp extra virgin olive oil
- ½ medium yellow onion , finely chopped
- 2 cloves garlic , chopped
- 2 tbsp tomato paste
- 2 tsp smoked paprika
- 1 tsp chilli powder
- ½ tsp cumin
- 2 cups pureed tomato sauce
- 2 tbsp maple syrup
- 4 whole-wheat buns , gluten-free if preferred

Instructions
- Heat the oil in a large, tall sided skillet over medium heat. Add the onion, and cook for 4 to 5 minutes, or until it begins to soften.
- Add the garlic, tomato paste, paprika, chili powder, and cumin, mixing to evenly distribute, approximately 2 minutes
- Add the lentils, tomato sauce, and maple syrup. Bring to a boil, and reduce to simmer for 15 to 17 minutes, or until thickened. Season to taste.
- Meanwhile, toast the buns.
- Serve in the buns, and enjoy! Note: Serve with a side salad or slaw.
