Ingredients

cooked brown or green lentils
, use canned if preferred

extra virgin olive oil

medium yellow onion
, finely chopped

cloves garlic

tomato paste

smoked paprika

chilli powder

tsp
cumin

cups
pureed tomato sauce

tbsp
maple syrup

whole-wheat buns
, gluten-free if preferred
Instructions
Heat the oil in a large, tall sided skillet over medium heat. Add the onion, and cook for 4 to 5 minutes, or until it begins to soften.
Add the garlic, tomato paste, paprika, chili powder, and cumin, mixing to evenly distribute, approximately 2 minutes
Add the lentils, tomato sauce, and maple syrup. Bring to a boil, and reduce to simmer for 15 to 17 minutes, or until thickened. Season to taste.
Meanwhile, toast the buns.
Serve in the buns, and enjoy! Note: Serve with a side salad or slaw.
