Ingredients
- 1 cup rolled oats
- 1 cup raw cashews
- 3 tbsp honey or maple syrup
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 pinch sea salt
- 1 tbsp chia seeds
- 1 tbsp poppy seeds

Instructions
- Combine the oats and cashews in a food processor. Pulse for 10 seconds until the cashews are in very small pieces.
- Add the honey, lemon juice, lemon zest, vanilla, and salt. Pulse until a dough forms.
- Stir in the chia seeds and poppy seeds.
- Use a tablespoon to portion into 12 balls.
- Store in an airtight container in the refrigerator for up to 10 days.
