Ingredients

rolled oats

raw cashews

honey or maple syrup

lemon juice

lemon zest

vanilla extract

sea salt

chia seeds

tbsp
poppy seeds
Instructions
Combine the oats and cashews in a food processor. Pulse for 10 seconds until the cashews are in very small pieces.
Add the honey, lemon juice, lemon zest, vanilla, and salt. Pulse until a dough forms.
Stir in the chia seeds and poppy seeds.
Use a tablespoon to portion into 12 balls.
Store in an airtight container in the refrigerator for up to 10 days.
