  1. Combine the oats and cashews in a food processor. Pulse for 10 seconds until the cashews are in very small pieces.
  2. Add the honey, lemon juice, lemon zest, vanilla, and salt. Pulse until a dough forms.
  3. Stir in the chia seeds and poppy seeds.
  4. Use a tablespoon to portion into 12 balls.
  5. Store in an airtight container in the refrigerator for up to 10 days.
