Ingredients
- 1/4 cup fresh lemon juice
- 2 tbsp dijon mustard
- 1 tbsp minced shallot
- 1 clove garlic - minced
- 1/2 cup olive oil
- 1/4 tsp sea salt
- pepper to taste
- 2 bunches Lacinto kale - stems discarded and leaves thinly sliced
- 12 oz brussels sprouts - trimmed and then shredded
- 1/2 cup almonds - slivered or chopped
- 3 cups finely grated pecorino or parmesan cheese

Instructions
- Combine lemon juice, olive oil, mustard, shallot, salt, and pepper in a bowl and set aside to let flavors marry. Mix the kale and shredded brussels sprouts in a large bowl. Pour dressing and cheese over kale and brussels sprout mixture. Massage with your hands to reach desired tenderness. Top with almonds and enjoy!
